Cookies for a snowday

My boyfriend and neighbors are absolutely amazing and always shoveling me out of my driveway.  So my way to say thanks was baking them some yummy winteresque cookies.  They were a huge hit! Try them yourself... 

White Chocolate, Cranberry and Walnut Cookies

Ingredients:
2 cups rolled oats
1 cup whole wheat flour
¼ cup ground flax
¼ cup coconut
½ tsp baking powder
½ tsp baking soda

2 large eggs
¼ cup sugar
individual size unsweetened applesauce
½ cup margarine

¼ cup white chocolate chips
¼ cup dried cranberries
¼ cup chopped walnuts

Directions:
Mix dry ingredients (first 6) in bowl and set aside. Mix next 4 ingredients in another bowl. Combine both bowls and mix well. Fold in remaining ingredients. Bake at 375° F for 10 minutes. Makes about 30 cookies.

A low calorie hit and delicious mix of low sugar, high fibre, omega 3 fats and protein. Yum!
